Executive Chef Carlos Andrés Meléndez

The Meridian Club is proud to introduce Chef Carlos Andrés Meléndez as our Executive Chef. Originally from Costa Rica, Chef Meléndez prides himself on reimagining diverse culinary traditions and creating dishes that highlight signature tropical exuberance and life-embracing culture. As a Chef, he aims to heighten the unpretentious purity of fresh flavors, vibrant colors and just-picked textures, and has had the opportunity to reinvent his own cuisine and create his own unique style.

During his career, he has worked in restaurants and resorts across Central America and the Caribbean as an Executive Chef, Director of F&B, Culinary Consultant and as a Professor for Le Cordon Bleu. He claims the latter was one of his most rewarding experiences as it allowed him to share his extensive knowledge with young future promises of the Food & Beverage and Hospitality Industry. 

His goal for guests at The Meridian Club? To echo and amplify their vacation by encouraging a connection to nature through a carefully designed menu that triggers powerful and delicious memories of a traveler’s experience through memorable dining options that heighten wellness, bliss and balance.
