A Perfect Pine Cay Valentines

Valentines at The Meridian Club…

If you’ve ever been a guest at The Meridian Club, you have no doubt experienced falling head over heels in love. A perfect white sand beach, waves gently lapping at the shore, a utopian sunset woven from fiery orange and pastel pinks… it’s impossible to deny the absolute beauty of our island home. It’s no wonder therefore, that Valentine’s Day is something quite special for us. This year, our Executive Chef, Carlos Melendez, created the ideal evening to share with your ‘someone special’ and we decided we simply had to share it with you!

‘People are transported to wonderful places via the taste and journey of food and we are in such a beautiful setting here on Pine Cay, that half my job is done before I’ve even created the menu!’ says Chef Carlos.

To start the day with a little romance, our guests got spoilt with a bottle of Prosecco and a rose being quietly left on the step of their Beachfront homes. As the evening drew in, they were then treated to a Valentines cocktail evening followed by a candlelit dinner featuring a specially designed 5-course tasting menu…and of course, a special dessert!

Valentines Cocktail Evening…

What Valentine’s Day is complete without a specially designed Love Potion libation? The evening started poolside with a delicious blend of vodka, peach schnapps and grapefruit shaken together before being topped with prosecco and poured into a glass served with a sugar rim and a strawberry garnish. With tastebuds ready to be wooed, Chef Carlos continued the evening with the following mouthwatering menu…

Valentines Tasting Menu…

  • Tuna Tataki with Baba Ganoush and Tempura Shrimp; lightly seared… the deliciously subtle flavors of fresh tuna tataki perfectly complimented the earthiness of freshly made Baba Ganoush puree and a crisp, yet light Tempura Shrimp.
  • Confit de Canard Salad; deliciously succulent shredded confit leg of duck, served with a salad of irresistible soft poached egg and confit potatoes.
  • Lobster Risotto; as if it needs any introduction… fresh from the sea, the delicate flavors of sautéed lobster paired with the comfort of a homemade lobster bisque risotto, topped with fresh parmesan.
  • Beef Tenderloin; mouthwatering beef tenderloin wrapped in salty and flavorsome prosciutto balanced with the sweetness of a caramelized onion puree and a crisp onion ring.

Dessert…

  • Chocolate Tart; dark chocolate ganache tart served with a chocolate dipped strawberry and a refreshingly sweet strawberry sorbet.

Cupid’s job almost complete, guests finished the evening with their appetites satisfied, watching the stars…as if Pine Cay wasn’t paradisiacal enough already!
