Cooking & Baking life in Pine Cay

Say “hello” to our new executive chef, David Little.  David comes to Pine Cay with a wealth of experience in Canada, including Niagara on the Lake, where he started his culinary training and returned years later to be executive chef.  His experience also includes time in Toronto, Lake Louise and Jasper.  As a trained chef in classical Italian, David is looking to put his own mark on the culinary achievements of The Meridian Club Bistro on Pine Cay.  For now he is enjoying meeting all the guests, owners and staff and learning about special diet requests.  But in time he will create a vision and a new menu, one that focuses on fresh and local ingredients.

Joining David in the kitchen is pastry chef Laura Horner-Richardson, who most recently worked in Vermont at the King Arthur Flour company baking bread and pastries.  Laura says she was immediately drawn to the ambiance of Pine Cay, and loves the opportunity to engage with guests and staff.  She says this creates a unique experience to ensure she is baking what people wish.   One of our favorite things about Laura?  She has offered to bake dog biscuits for the K-9 unit. 

Two upcoming changes to look out for next season will be a Food & Wine Themed week during Thanksgiving, and cooking lessons.
